Take a plate, put the toasted bread and add the poached eggs on it. Add the deep fried sweet potato around and few pieces of asparagus. Add the bacon on the top of the eggs, some fresh basil, spicy mayonnaise and kumquat.
For a person who wants more flavor, I recommend to take the toast with eggs, add some fresh cheese on it! Delicious!
(*) Poached Egg: the technic is to break an egg and put in small bowl, when the water boiled, add the egg and with two spoons try to put the white egg around the yolk.
Cook for 5 min, then take out and put on absorbing paper. The form must be oval.
